Fundamentals of Nutrition
Lower division college introduction to nutrition 16 week course covering US 2020-2025 Dietary Guidelines, macronutrients, micronutrients and nutrition throughout the lifespan. Through 16 modules, students explore topics including dietary guidelines, digestion, macronutrients (carbohydrates, lipids, proteins), micronutrients (vitamins, minerals, water), energy balance, and fitness. Special focus is given to nutrition in different life stages, from pregnancy and infancy to older adulthood, as well as contemporary issues such as eating disorders, food safety, and global food insecurity.
The course blends scientific foundations with practical applications: analyzing food labels, creating dietary records, evaluating nutrition claims, and understanding cultural and environmental influences on diet. By the end, students will be able to make informed choices about their own nutrition while considering public health and sustainability.
